Can I begin this post by telling you that I fully realize that this isn’t groundbreaking?
That most of you probably have a pulled pork recipe?
But in case you don’t, I thought I’d share my easy peasy, ultra quick, no nonsense pulled pork routine.
Because I made it yesterday and it made me happy.
You know those gigantic pork tenderloins at Costco that are as long as your leg?
Okay, maybe only my leg because I’m all of 5’2″.
Moving on…I buy the giant (unseasoned) ones and then cut them up into 3-4 equal lengths.
Double wrap them in saran wrap, put them in a ziploc freezer bag, and then freeze.
Crazy cheap this way.
The trick is remembering to take out the piece you’ll be using a couple of days in advance. They take a while to defrost.
Pull out the handy dandy crock pot you got as a wedding gift.
Toss in your defrosted pork and pour an entire bottle of barbeque sauce over it.
Pile on some garlic.
A lot of garlic.
Because there is no such thing as too much garlic.
Unless you’re a vampire.
Which I am not.
So it works out.
Set on HIGH FOR SEVEN HOURS.
Walk away.
Go to the park.
Get your hair did.
Whatever.
Be sure you have it set to high though, okay?
About 30 minutes before you’re ready to serve, TURN OFF your crock pot and pull apart the pork with two forks.
It should basically fall apart.
Make sure you do this step at least half hour before dinner because by now the BBQ sauce is totally liquified. You want to give it some time to “set” again and really penetrate the now shredded pork.
It’s helpful to have a dramatic scene with CandyLand gingerbread men acted out for your entertainment while you do this.
Generously butter some french rolls and broil in your oven open faced for a couple of minutes.
No, really…only like 2 minutes. Don’t leave the room. You’ll burn them to a crisp in a jiffy if you’re not careful.
Not that I would know that from experience or anything.
Yes, we’re a margarine family.
Yes, I know it’s like two steps away from being plastic.
Yes, I know that’s gross.
But it’s what I grew up with, and one of those things I just can’t make the switch to. I’ve tried. More than once.
Preservatives to put some hair on your chest.
If you’re into that kind of thing.
I usually serve with boxed scalloped potatoes and/or coleslaw. Just kinda depends on what I have on hand.
Eat up.
Easy. Quick. Leftovers for sure. Not low fat.
Deal with it.
We l-l-l-oooove pulled pork!
And I had that crockpot too! I think a certain redneck of mine was responsible for the need for replacement… just sayin ;)

We *love* pulled pork sandwiches in this house. And I’ve been wanting to try the knock off “Cafe Rio” recipe. What I never thought of was cutting up the pork tenderloin … brilliant for our little family of 3!!
