Delusions and another recipe

I have this secret fantasy.

(No…stop it.  Not THAT kind of fantasy!!!  Sicko!)

Where my kids are all lying around the Christmas tree, with their kids playing with new toys.

And I’m dead.

And they sit and reminisce about their parents (that would be me and Andy in case you were confused).

And one would say: “Remember how Mom would always make us all those yummy breads all the time?”

“Yeah.  And remember how she would get up early and bake them at like 5:30 in the morning so that we could wake up to the smell of piping hot pumpkin bread from our beds?”

“And she would come up and wake us up telling us we had a surprise waiting downstairs even though you couldn’t possibly miss the smell??? And we’d act all surprised just to make her happy?”

“Yes!  And can you believe she did all that work when she didn’t even like it???!!! Boy, she sure loved us!”

That’s my fantasy.

That they remember that kind of thing.

And not all the times I threatened to sell them on Craigslist.

“If you guys don’t knock it off, I’m putting you up on the internet!!!  Buy two, get one FREE!!!”

What?

You never do that?

Oh.

There go my ideals of being the perfect mom.

Poop.

But the truth is, I get all nostalgic and June Cleaver on my family as soon as the weather starts to cool off.

You know, to a breezy 65 here in California.

And I bake.  A lot.

And a couple of mornings ago, I decided to treat my family with “my” famous pumpkin bread.

Like my banana nut bread, I have never once taken a single bite.

I don’t like flavored breads if you haven’t deduced that by now.

But, even the pickiest people have begged me for the recipe.

And, like my banana nut bread, I have had this recipe for so long, I can’t begin to guess where I got it…

…sooooo basically I just pretend like I invented it.

It’s whatevs.

I didn’t take step by step photos…because there really aren’t any special instructions.  Just mix it all together.  Bake.  I don’t know how long.  Just check it with a toothpick.  Loaves bake longer than mini muffins.  Obvs.

Note the 13.5 pound bag of baking soda.  Nice.

This makes A LOT.

Try to not have a heart attack on the spot as you realize just how much sugar and vegetable oil you are pouring into your bowl.  It’s better that way.

This will make three 9×5 loaves.  Or 852 muffins.  Or 1,287 mini muffins.  Or whatever combination of the three you decide.

I usually do one loaf, 24 muffins and 24 mini muffins.

You know, for variety.

Feed to your kids.

Who ADORE it.

Which may, or may not, be because of the 4 cups of sugar in the recipe.

It’s homemade.  That makes it healthy, right?

Jill gets frantic when she sees them.

I actually have to hide the platter.

Or she’ll freak out and insist on them for every meal.

Chick is nuts.

    Speaking from experience…I must say that this IS the best pumpkin bread I have ever had…I know it is because of all the love you put in to it!!

    Yum!!! I’ve had a lot of luck subbing applesauce for 1/2 the oil and at least half of whole wheat flour — you don’t even notice the difference in taste!!!

    Awesome! Mine is similar and the whole crew goes nuts. I’ve never made them as muffins though – but then again, I don’t actually bake it, I just push the button on the bread maker. I am going to go hunt down your banana nut bread recipe though. Happy Halloween!
