That title has an asterick in it.
Because I hate banana bread.
In fact, I don’t even really like bananas at all.
Maybe once or twice a year I’ll eat one.
Maybe.
No, not even that often.
So, although I’ve made this so many times, I have the recipe memorized, I have yet to ever take a single bite.
Not one.
BUT, every. single. person. who has eaten this raves about it.
“This is even better than the banana bread at that expensive/fancy bakery in town!”
“I thought my banana bread was good…this is amazing!”
“Mmmmm…can I get this recipe??!!”
So, all of that to say, that I can’t personally vouch for it, but it appears that people who like banana bread, love this version.
I didn’t make up this recipe myself, but sadly, I can’t give credit to whoever did. I got it from somewhere so many years ago, I couldn’t even begin to guess where it was originally from.

And with that, preheat your ovens to 350…
1/2 c. butter, softened
1 c. brown sugar
2 eggs
1 tblsp. vanilla (yes, a tablespoon)
3-4 very ripe bananas
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. chopped walnuts (optional)
1. Cream the butter and the sugar.
2. Add eggs and vanilla.
3. Mix in the banana nastiness. Oh wait, you guys like bananas. Sorry.
4. Convince your one year old that as much as she thinks she wants that dry pasta, it’s really not that yummy.
5. In a SEPARATE bowl, mix your dry ingredients. Flour, blaking powder, salt.
(Do you know why this is important? Have you ever made a batch of cookies and you did everything exactly the same and somehow they came out flat? Well, that’s probably because you mixed all the wet/dry ingredients together at once. You got uneven pockets of baking powder/soda in there. So you always have to mix dry ingredients separately if there is a leavener in the recipe to ensure that everything is mixed through evenly. There you go. Baking 101 for today. You’re welcome.)
6. Mix the dry bowl and the wet bowl together. Sorry no pics. But I’m guessing you can figure that out. Add your walnuts if you are doing that.
7. Bake at 350 for an hour or until toothpick clean. I’m pretty sure that it bakes better in a Le Creuset baking dish. Positive. I always feel really fancy when I cook with my Le Creuset.
Serve warm with butter.
But don’t eat any, because it’s got nasty bananas in it.
Unless you like that kind of stuff.
Beware that your bananas may soon mysteriously go uneaten so that they regularly turn brown.
So that you are constantly making this so as not to waste them.
Until you find out that your husband is very purposefully leaving 3 bananas in the bowl to get old.
Not that that’s happened around here.
For like 2 years.
Not that it took me that long to figure it out.
Because surely I’m smarter than that right?

Thank you for the baking 101 tip. I did not know that. I usually use one bowl because I despise washing dishes as much as you despise banana bread! I want to try this though. :)

This is so timely because I have THREE way-too ripe bananas that have been begging to be made into banana bread, and I keep putting it off. Probably because I was waiting to get the best ever banana nut (minus the nut) bread recipe. Maybe I’ll go do it right now.
And I’ve always wondered why you mix the dry ingredients separately, and that makes total sense.

I made this bread yesterday. It is amazing! It was gone in MINUTES at my house. I’m so thankful I had super ripe banana’s that could be used at that very moment!
